BBQ Chicken and Veggie Skewers

BBQ Chicken and Veggie Skewers
Ingredients:
- 225g boneless, skinless chicken breast, diced (approx. 165 calories)
- 1 medium zucchini, sliced into rounds (approx. 33 calories)
- 1 red capsicum, chopped into chunks (approx. 37 calories)
- 1 yellow capsicum, chopped into chunks (approx. 30 calories)
- 1 red onion, chopped into chunks (approx. 44 calories)
- 2 tablespoons olive oil (approx. 240 calories)
- 2 cloves garlic, minced (approx. 10 cals)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Lemon wedges (to serve)
Instructions:
- Chuck olive oil, minced garlic, dried oregano, dried basil, salt, and pepper into a bowl. Give it a good mix – that’s your marinade sorted.
- Chuck your diced chicken into a dish and pour half of that marinade over it. Give it a good toss, then let it hang out in the fridge for at least 30 minutes.
- Get your barbie fired up to medium-high heat.
- Thread your marinated chicken and prepared veggies onto skewers, swapping between chicken and veg as you go.
- Give your skewers a nice brush with the leftover marinade.
- Pop those skewers on the grill and cook ’em up for 8-10 minutes, turning now and then, until the chicken’s cooked through and the veggies are tender and a bit charred.
- Whip those skewers off the barbie and serve ’em up hot with a few lemon wedges on the side.
